CARAMELISED BANANA PORRIDGE

If you’ve not caramelised your bananas yet, then make your way to the kitchen now.
This caramelized banana porridge is made with sweet and gooey caramelised bananas served over creamy oats. Top with some dark chocolate and bluebs, and you have a winning breakfast/snack/lunch or dinner ?

INGREDIENTS
▪️1 cup rolled oats
▪️2 cups almond milk
▪️2 bananas, sliced into discs
▪️1–2 tbsp coconut oil
▪️1/4 cup maple syrup, divided
▪️1 teaspoon vanilla
▪️1/2 tsp cinnamon
METHOD
▪️Add the oats and milk to a pot and bring to boil.
▪️Reduce heat to low, add cinnamon and vanilla and let simmer until thickened.
▪️While the oats are cooking, add the coconut oil and 2 tbsp maple syrup to a large pan. Once it is sizzling, add in the sliced bananas.
▪️Cook on each side for about 3-5 minutes, or until nice and golden brown.
▪️When the oatmeal is done, stir in the final 2 tbsp of maple syrup (optional) and top with bananas.
