There are few things that I love and one of them is called garlic.
.
But you know what?
.
Garlic doesn’t love me back ?
.
Instead garlic loves eggplant & tomatoes!
.
So why not use all three of these ingredients to create an AMAZING pasta dish ?
.
And if I may, with the addition of eggplant, I also suggest you pan fry some whole cherry tomatoes! It really gives the dish another dimension ?
.
So what to do?
.
Pan fry on (preferably olive oil) sliced eggplant & cherry tomatoes till golden brown. Add thinly sliced garlic and after a few seconds also some tomato sauce. Use the best you can find! Add salt, chilli and pepper, cook for a few minutes, then add some fresh basil leaves and a splash of garlic flavored @oliveoilmorgan and that’s it! ❤️
